Jade Garden Tokyo

Hyatt Regency Tokyo opened in 1980 as the first Hyatt hotel in Japan and has recently undergone the most extensive transformation in its 45-year history. Jade Garden Tokyo was established when the hotel opened in 1980, specializing in authentic Shanghainese and Beijing cuisine. The restaurant masterfully combines the flavors of regional Chinese cooking with the freshness and precision of Japanese ingredients.

A Singular Lens on Chinese Cuisine in Shinjuku

Jade Garden Tokyo delivers an ever-evolving menu that celebrates tradition and innovation, making it the premier destination for elevated Chinese dining in Tokyo. Executive chef Shinya Matsumoto—a Hyatt stalwart since 1991—took the helm in 2022 with a dual mission to preserve the “tradition” regular guests cherish while introducing “innovation”.

Jade Garden will welcome Executive Chef Wang Bin from Hyatt Centric Lakeside Ningbo for a special culinary collaboration this Summer. Guests can enjoy a menu inspired by the rich flavors of Ningbo cuisine.

From jade-green razor clams bathed in Shaoxing broth to silky tofu crowned with crab roe and fragrant cured-fish fried rice, a flavor that reflects the taste of summer.

Signature Dishes

  • Mapo Tofu, Boston Lobster – the kitchen’s show-stopping signature layers silken tofu and Szechuan pepper heat around an entire lobster tail.

  • Braised Pork with Black Vinegar – Shanghai’s sweet-and-sour soul rendered glossy and fork-tender.

  • Slow-Braised Fresh Abalone with Pumpkin and Sweet Pea – a masterclass in umami, kissed by abalone sauce.

Seasonality drives creativity: “RENKA” and multicourse journeys such as “ZUISYOU” and “HISUI” are Lunch courses that are introduced several times a year to showcase locally sourced vegetables. A favorite of Jade Garden is the Cold Noodles, a popular summer dish that introduces the flavors of the season.

A Beverage Program Tailor-Made for Oenophiles

ilovewine.com readers will appreciate that Jade Garden’s drink list is more than an afterthought—it is a curated bridge between East and West. Three highlights:

  1. Chinese Wine Flight – sip a citrus-lined Artist Collection Chardonnay 2021 before moving to the dark-berry depths of Music Score Cabernet Franc 2017 and the supple Pinot Noir 2017, all from boutique producer Château Chanson.

  2. Shaoxing Highball – dried-plum-infused yellow wine, topped with ginger beer, brings Zhejiang’s storied rice wine into 21st-century cocktail culture.

  3. Three-Glass Wine Tasting Set – a nimble tour from Moët & Chandon to Premier Cru Chablis and right-bank Bordeaux, ideal for pairing across a multicourse meal.

Summer guests can cool off with the aquamarine “Sky High” (yuzu liqueur and white-peach juice) or the lychee-driven “Lizhi,” while teetotalers find refuge in tropical non-alcoholic spins such as “Mau Loa.”
